Eizo Shimazaki - Manager of Menya Noodle Bar Chinatown

When I lived in Japan I had an interest in working abroad and thought one day I will work in another country. Then I met Mr. Inoue who has a successful restaurant business in Sydney. So after that I wanted to do what he had done as well. Then in 2009 I started working in “Menya Chinatown”. The former manager of “Menya Chinatown” taught me “Everything I need to know about noodles” I learned the secret to making noodles and noodle soup. Seeing the customer’s smile of satisfaction was my reward. Making Menya tonkotsu-soup every day makes me want to work really hard. I want to keep making delicious ramen for our customers to make Menya the No.1 ramen shop in Sydney.
